As a supplier of quality goods and ingredients to the bakery markets BFP get to witness the changes in the Bakery market first hand. Society is changing, and the way the general public see the high street baker as certainly changed in recent times. So what are the factors and influences for such change? Here, we discuss some findings and what it means to the baker.

Health & Wellbeing

We have all witnessed a shift in what to eat and what not to eat however, trends in low-carb and Keto diets are creating trends both on the high street and on-line. Wholegrains and other wholesome ingredients are being sought after, and there is signs of a shift towards savoury than sweet. We all value our health and like some who have reduced their red meat intake due to global warming, people are also seeking an healthier option when it comes to desserts and pastries.

Portion Control

So we all love that extra treat, a slice of cake, muffin, or some other mouth-watering desert but society is telling us now to watch our portions. Yes, it is now acceptable to consider smaller portions of a good quality cake rather than ‘pig out’ on something which would probably fill you for the entire day. Saying this, the previous generations would have probably said “where is the rest”? if they were given a smaller portion.

The Bakery Experience

More and more traditional bakery shops are changing with the changing market. Front of house they are installing barista machines and looking to create eatery spaces. The traditional baker is moving into the hospitality markets and consumers like you and I appear to be taking the bait. We once may have lunched in a nice restaurant however, more and more of us are more accepting of a great coffee, slice of cake or pastry.

Technology

Technology is certainly advancing each and every day and it affects us all. Fast food chains are using oversized touch screen order units to order our burger, our food and takeaways are being delivered via apps like Just Eat and Uber Eats. Laziness or convenience? We like to think it is the latter however, a surge in such experiences exploded when we all experienced lock down and Covid-19.

BFP also look at continuous improvement in technology, and our website is always under development so that we can offer a 24/7 ordering platform for busy bakers to order at a time to suit them.

We still eat with our eyes! And everyone is on board with this by using social media. Bakers are no longer just looking at their window displays, they are appealing to us in our social news feeds.

Finally

You will find so much information in the internet about these changing times, and we have come across a great resource from The British Baker which you are allowed to download free from here.
