Treat your mum on Mother's day to this cream sponge.  Using the fantastic Macphie products, its so easy to make and tastes delicious. 

Ingredients

1000g Macphie sponge cake mix

500g water

Macphie mactop extra

Macphie sweet snow

Method

Add the Macphie sponge cake mix to a mixer fitted with a beater.

Add the water and mix for 1 minute on the 1st speed.

Scrape down and whisk on the top speed for 10-15 minutes, followed by 2 minutes on the 1st speed.

Deposit approximately 160g of batter into a 6" deep round cake tin and bake at 190°C (380°F) for approximately 18 minutes.

Leave to cool and then split the cake in two.

Layer together with the whipped Macphie mactop extra.

Why not add a fruity filling for an extra special touch.

Finish with a dusting of Macphie sweet snow.
