Let's do the monster mash this Halloween with these super monster muffins.

Ingredients
420 g - Water (1)
110 g - Vegetable Oil
200 g - Water (2)
For Decorating - Mini Marshmallows
As required - Red / Strawberry Jelly
For Decoration - Sugar Eyes
As Required - Funfetti Sprinkles
As Required - Red Food Colouring
Method

•    Make up your red / strawberry jelly as per the packet instructions.
•    Stir in the Funfetti sprinkles (amount will depend on the desired visual).
•    Pour the mixture into silicone moulds.
•    Chill and allow to set.

Directions

•    Make up your red / strawberry jelly as per the packet instructions.

•    Chill and allow to set.

Large Muffins / Cupcakes

Ingredients

1000 g - Dark Devils Genoese Base

420 g - Water (1)

110 g - Vegetable Oil

200 g - Water (2)

Directions

•    Add the Dark Devils Genoese Base, Water (1) and Vegetable Oil to a mixing bowl fitted with a beater.
•    Mix for 1 minute on slow speed and then for a further 4 minutes on medium speed.
•    Stream in water (2) while mixing on slow speed for over 1 minute.
•    Scrape down and mix for a further 1 minute on slow speed.
•    Deposit 120g into prepared tall/deep muffin tins.
•    Bake at 170ºC for 30-35 minutes.
•    On removal from the oven, invert the tins to aid flattening the bases.

Assembly

•    Attach 2 eyes using warmed Vanilla Glossy Icing onto each cooled muffin.
•    Using red food colouring, colour some warmed Vanilla Glossy Icing.
•    Using the red icing, pipe a mouth onto the muffins and attach mini marshmallows, and pipe a couple of cuts with stitches.
•    Remove the set Jelly Brains from the moulds and attached onto the top of the muffins with more warmed icing.
•    Pipe some red icing around the base of the jelly to create a cut and blood drips.
