Application Instructions:

  1. Ingredients:

    • 1000 g of Raised Plain Donut Base
    • 1000 g of Strong Bread Flour
    • 1000 g of Water
    • 100 g of Yeast
  2. Preparation:

    • Mixing: Combine all ingredients in a mixing bowl. Mix on slow speed for 2 minutes to incorporate the ingredients. Then, increase to fast speed and mix for approximately 8-12 minutes until the dough is well developed. The dough temperature should be between 26-28°C (79-82°F).
    • Resting: Allow the dough to rest for 10 minutes to facilitate proper fermentation and dough relaxation.
  3. Shaping and Proofing:

    • Shaping: Shape the dough as desired, either into rings or balls.
    • Proofing: Place the shaped dough in a proofer set to 35-40°C (95-104°F) with 60-70% relative humidity. Allow the dough to prove for up to 50 minutes, or until it has doubled in size.
    • Drying: Let the dough dry for up to 10 minutes before frying to ensure a proper crust formation.
  4. Frying:

    • Temperature: Fry in high-quality shortening at 185-190°C (365-374°F).
    • Timing:
      • Ring Donuts: Fry for 1 minute on each side.
      • Ball Donuts: Fry for 1.5 to 2 minutes on each side.
    • Note: Adjust frying times and temperatures based on specific fryer conditions and desired donut texture.
